HERE is my pictorial guide to great Welshcakes. I use a large bowl for mixing the ingredients which are One bag of self raising flour, preferably organic. Third of a bag of sugar. A pinch of Welsh sea salt. A pinch of cinnamon (optional), a pinch of baking powder, half a pack of Welsh butter. Mix all these together until you get bread crumb quality. Now add mixed fruit, one egg, some water and a dash of milk until you get a dough like quality. Roll out the dough to about 2cm thick and cut into rounds. Using a maen or bake stone cook until light brown on either side.
